Checkerboard Open Sandwiches

These stunning, open-faced sourdough toasts are as fun to make as they are to eat. This recipe makes one large slice of each variation, but you can easily scale it up for a garden party or summer gathering.

Ingredients

  • For The Base
  • 3 large slices of Hovis White Sourdough bread
  • Variation 1: Tomato & Goats' Cheese
  • A handful of red and yellow cherry tomatoes, sliced into rounds
  • 100g soft spreadable goats' cheese
  • Variation 2: Blueberry, Cheddar & Honey
  • A handful of fresh blueberries, halved
  • 100g mature Cheddar cheese, cut into small, even cubes
  • A drizzle of runny honey
  • Variation 3: Olive, Feta & Olive Oil
  • A handful of pitted green olives, halved
  • 100g feta cheese, cut into small, even cubes
  • A drizzle of extra virgin olive oil

Tip

To get the best checkerboard effect, try to cut your cheese cubes to roughly the same size and thickness as your halved blueberries and olives!

For the tomato and goat’s cheese toast, spread an even layer of the soft goat’s cheese across the first slice of sourdough. Then arrange the red and yellow cherry tomato slices across the top to create a vibrant, colourful pattern.

On the second slice of sourdough, create a checkerboard pattern by alternating the cubes of cheddar cheese and the halved blueberries. Just before serving, drizzle some runny honey across to tie the sweet and savoury flavours together.

On the final slice of sourdough, create another checkerboard pattern by alternating the feta cheese cubes and the olive halves. Finish this with a light drizzle of extra virgin olive oil. Then arrange the three toasts on a large serving platter and serve immediately.
