Tomato Bruschetta

Ingredients

  • 2 Slices Hovis® White Sourdough
  • 8 Tomatoes (diced)
  • ½ Onion (thinly sliced)
  • 6 Leaves fresh basil (thinly sliced)
  • 2 Garlic cloves
  • 1 Tablespoon of olive oil
  • 1 Tablespoon of balsamic vinegar
  • Salt and pepper to taste

Tip

Let the tomato mixture sit for at least 15–30 minutes before serving. This gives the flavours, especially the garlic, basil, olive oil, and salt, a chance to meld and deepen.

Place two slices of Hovis® White Sourdough in the toaster.

Using a grater or garlic press, grate one garlic clove into a large mixing bowl. Add the chopped tomatoes, red onion, and basil leaves. Then add one tablespoon of olive oil, balsamic vinegar, and season with salt and pepper to taste.

Once your toast is ready, take a peeled garlic clove and gently rub it over the surface of each warm slice for extra flavour. Top it with a spoonful the tomato mixture. Serve immediately while the bread is still warm and crisp.
