Meatball Sub with Tomato Sauce, Basil and Cheese

Cheesy, and irresistibly comforting, this Meatball Sub is the ultimate treat. Juicy beef meatballs simmered in a tasty tomato sauce and added into a soft Hovis Buttermilk Sub Roll, then topped with melted mozzarella, grated parmesan, and fresh basil. Grilled until golden and gooey, it’s a warm hug in sandwich form.

Ingredients

  • 1 Hovis® Buttermilk Sub Roll
  • ½ Red onion (diced)
  • 1 tbsp Olive oil 1 Garlic clove (minced)
  • 1 Tin Chopped tomatoes (400g)
  • 4 Beef meatballs
  • 40g Mozzarella (sliced)
  • 10g Parmesan cheese (grated)
  • 5 Fresh basil leaves
  • Pinch of salt

Tip

For extra depth of flavour, deglaze the pan with a splash of red wine or balsamic vinegar before adding the tomatoes

Method

Heat the oil in a pan over medium heat, add the diced onion, and cook for 10–15 minutes until soft. Add the meatballs and fry until golden, then stir in the garlic and cook for 2 more minutes.

Pour in the chopped tomatoes and a pinch of salt. Simmer for 20 minutes until the sauce thickens and the meatballs are fully cooked. Slice the Hovis® Buttermilk Sub Roll in half lengthways and preheat the grill to medium-high.

Spoon 4 meatballs and some sauce onto the bottom half of the roll. Top with mozzarella slices and grated Parmesan.

Grill both roll halves - the filled one to melt the cheese, the other to toast. Once golden, remove, add fresh basil leaves, close the sandwich, and serve hot.
