Ingredients

  • 2 low-fat sausages
  • 3 - 4 chestnut or button mushrooms, sliced
  • 1 large egg
  • 2 slices of Hovis Tasty Wholemeal bread
  • A small handful of fresh spinach leaves
  • 2 slices of large tomato
  • A splash of olive oil or vegetable oil for frying
  • Salt and freshly ground black pepper to taste

Tip

If you want to cut down on the cooking time, you can slice the raw sausages in half lengthways before frying them in the pan with the mushrooms. They will cook through in about 5 - 6 minutes this way, cutting your total time nearly in half!

Preheat your grill to a medium-high heat. Place the sausages on a foil-lined baking tray and grill them until they are golden brown and cooked through. Remove them from the heat and slice each sausage in half lengthways.

While the sausages are grilling, heat a little oil in a frying pan over a medium heat. Add the sliced mushrooms and fry until they are soft and lightly browned. Season with a pinch of salt and pepper, then transfer them to a plate.

In the same pan, add another small splash of oil if needed. Crack the egg into the pan and cook it until the white is completely set but the yolk remains beautifully runny. Season the top with freshly ground black pepper.

Place your two slices of wholemeal bread on a clean chopping board. On one slice, layer the fresh spinach leaves first. Top with the grilled sausage halves, followed by the sautéed mushrooms.

Carefully slide the fried egg on top of the mushrooms. Finish with the tomato slices before placing the second piece of bread on top.

Gently press down on the sandwich, slice it in half and enjoy immediately whilst warm.
