This quick and easy breakfast features Hovis wholemeal toast topped with a perfectly cooked egg, melted cheese, juicy cherry tomatoes and a kick of chilli oil. Perfect for a speedy weekday breakfast or a lazy weekend brunch.

Ingredients

  • 2 slices Hovis Tasty Wholemeal Thick bread
  • 2 Happy Egg Co. Large Free Range eggs
  • Handful of cherry tomatoes, quartered
  • Handful of grated Cheddar cheese (or Mozzarella)
  • Small bunch of fresh chives, finely chopped
  • 1–2 tsp Crispy chilli oil

Tip

If you prefer a firmer egg yolk, simply leave it in the air fryer for an extra 1 to 2 minutes.

Place the two slices of bread onto a clean chopping board. Take a small glass and press the rim firmly into the centre of each slice to create a well/indentation. This will hold the egg in place.

Carefully crack one egg into the centre of each indentation.

Scatter the quartered cherry tomatoes around the egg yolk, then sprinkle a generous handful of grated cheese over the top of both slices, avoiding the very centre of the yolk.

Carefully lift the loaded slices and place them side-by-side into your air fryer basket. Cook at 180°C for 7 minutes (or until the egg white is completely set, the cheese is golden and bubbling, and the yolk is cooked to your liking).

Gently remove the toast from the air fryer. Garnish with a sprinkle of freshly chopped chives and drizzle over the crispy chilli oil. Slice open to reveal that perfectly runny yolk and enjoy hot!
