A fresh take on a veggie favourite, this vibrant sub layers creamy goat’s cheese, golden grilled courgettes, and peppery rocket in a soft, herby Hovis Cheese & Herb Sub Roll. Finished with a generous swirl of pesto, it’s a light yet delicious bite packed with bold Mediterranean flavour.

Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add the courgette ribbons and cook for 2–3 minutes on each side until golden and tender. Remove from the pan and set aside.
Slice your Hovis® Cheese & Herb Sub Roll in half lengthways. Toast both halves lightly in a dry pan or under the grill for a few minutes until warm and just crisp.
Spread the soft goat’s cheese evenly over the bottom half of the roll. Layer on the warm courgette ribbons, then drizzle over the pesto.
Top with a small handful of rocket leaves, close the sandwich with the top half of the roll, and serve immediately. Enjoy!
