A fresh take on a veggie favourite, this vibrant sub layers creamy goat’s cheese, golden grilled courgettes, and peppery rocket in a soft, herby Hovis Cheese & Herb Sub Roll. Finished with a generous swirl of pesto, it’s a light yet delicious bite packed with bold Mediterranean flavour.

Ingredients

  • 1 Hovis® Cheese & Herb Sub Roll
  • 1 tbsp Olive oil
  • 1 Small courgette (sliced into thin ribbons)
  • 60g Soft goat's cheese
  • 1 tbsp Pesto
  • Small handful of Rocket leaves

Tip

For extra depth of flavour, let the cooked courgette ribbons sit for a minute with a pinch of sea salt and a dash of lemon juice before assembling

Method

Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add the courgette ribbons and cook for 2–3 minutes on each side until golden and tender. Remove from the pan and set aside.

Slice your Hovis® Cheese & Herb Sub Roll in half lengthways. Toast both halves lightly in a dry pan or under the grill for a few minutes until warm and just crisp.

Spread the soft goat’s cheese evenly over the bottom half of the roll. Layer on the warm courgette ribbons, then drizzle over the pesto.
