Garden Herb Toast with Garlic Prawns and Avocado

This vibrant breakfast combines creamy soft cheese, fresh herbs, and succulent garlic prawns on a textured base of Hovis Seed Sensations bread. It is fresh, quick to make and a great way to use windowsill herbs!

Ingredients

  • 2 slices of Hovis Seed Sensations
  • 150g soft cheese (cream cheese)
  • a handful of fresh parsley
  • a few sprigs of fresh thyme
  • 100g raw king prawns (peeled)
  • 10–12 cherry tomatoes (halved)
  • 1-2 cloves of garlic (finely chopped)
  • 1 ripe avocado (sliced)
  • a drizzle of extra virgin olive oil
  • a pinch of saffron (optional)
  • salt and pepper to taste.
  • Steamed or griddled asparagus tips

Tip

If you fancy an extra kick, sprinkle a pinch of dried chilli flakes over the garlic prawns while they are still in the pan. The heat of the oil will "wake up" the spice, perfectly balancing the cooling herb spread and rich avocado.

Finely chop your garden herbs. In a small bowl or food processor, blend the herbs with the soft cheese until smooth and vibrant green. Set aside.

Heat a splash of oil in a frying pan over medium heat. Add the chopped garlic and prawns. Once the prawns start to turn pink, toss in the halved cherry tomatoes. Sauté for a few minutes until the prawns are cooked through and the tomatoes have softened slightly. Season with a pinch of salt.
