Falafel, Hummus and Slaw Sub

Bold, bright, and bursting with plant-based goodness, this sub combines crispy falafel, creamy hummus, and a homemade slaw. Served in a soft Hovis Sub Roll, it’s a fresh, tasty lunch packed with texture, flavour, and a hint of citrus zing.

Ingredients

  • 1 Hovis® Buttermilk Sub Roll
  • 75g Falafel (broken into bite-sized chunks)
  • 2 tbsp Hummus (any variety)
  • 10g Red cabbage (thinly sliced)
  • 10g Carrot (grated)
  • 1 tsp Chopped coriander
  • ½ Lime (juiced)
  • Pinch of Salt

Tip

For extra depth of flavour, toast the sub roll before assembling. The warm, slightly crisp base adds contrast to the creamy hummus and crunchy slaw

Method

In a bowl, mix together the red cabbage, grated carrot, lime juice, and a pinch of salt. Let the mixture sit for 10 minutes to soften, then stir in the chopped coriander.

While the slaw is resting, heat a little oil in a frying pan over medium heat. Cook the falafel pieces for 4–5 minutes, turning occasionally, until golden and heated through.

Slice the Hovis® Honey & Sunflower Sub Roll in half lengthways. Spread the bottom half with hummus.

Add the warm falafel pieces on top of the hummus, then pile on the zingy slaw. Sandwich together and enjoy!
