Take your leftover bread from the freezer and allow it to defrost completely at room temperature.
Cut the bread into bite-sized cubes. Place them in a bowl and coat thoroughly with a drizzle of olive oil, a pinch of salt, and a generous dusting of garlic powder. Toss until every cube is well-seasoned.
Spread the bread cubes onto a baking tray lined with parchment paper. Bake in the oven (around 180°C) until they are golden brown and crispy.
Chop the Romaine lettuce and add it to a large mixing bowl.
Add the sliced crispy chicken goujons, a helping of grated Parmesan, and about half of your warm croutons to the bowl. Drizzle with Caesar dressing and toss until everything is fully combined.
Plate up the salad and top with the remaining croutons and an extra sprinkle of Parmesan for that perfect crunch.
