Ingredients

  • 1 Hovis® 1 Protein Sunflower & Honey Sub Rolls
  • 2 tbsp mayonnaise
  • 1 tsp curry powder, to taste
  • ½ tsp ground turmeric
  • ½ tsp ground cinnamon
  • 1 tbsp mango chutney
  • 15g coriander (roughly chopped)
  • 1 Chicken breast or thigh (cooked and diced)
  • A handful of slice iceberg lettuce
  • 1 Large tomato (sliced)
  • ⅓ of an apple (diced)

Tip

Use a combination of mayonnaise and plain yogurt for the sauce. This creates a creamy texture while allowing the other flavours (spices, fruit, etc.) to shine through more prominently.

Method

Mix together the mayonnaise, turmeric, cinnamon, curry powder and chutney in a medium bowl. Stir in the fresh coriander, and season with salt and ground black pepper to taste.

For the hint of sweetness, you can add some diced apple to the mix. Alternatively you can swap this for a handful of raisins if you prefer!

Add the diced cooked chicken to the sauce and stir until they're coated. If the mixture seems a bit thick, stir in 2 tablespoons of water to loosen it up.

Cut your Hovis® Protein Sunflower & Honey Sub Roll in half and butter the base, then layer your lettuce leaves and tomatoes. Spread your Coronation Chicken on top and add a dash of salt and pepper if you wish.
