Radish Ricotta Toast

This Radish Ricotta Toast recipe is a brilliant shout for a quick lunch or a fancy snack. Using Hovis Tasty Wholemeal works well as the sweet, nutty flavour of the bread compliments the creamy cheese and the peppery radishes.

Ingredients

  • 1 slice Hovis Tasty Wholemeal bread
  • 4 tbsp ricotta cheese
  • 3-4 red radishes, thinly sliced into rounds
  • 4-5 cherry tomatoes, halved
  • Fresh parsley (for garnish)
  • Optional: A drizzle of extra virgin olive oil, a squeeze of lemon juice, or a pinch of flaky sea salt and cracked black pepper.

Tip

If your radishes are particularly "spicy," soaking the slices in ice-cold water for 5 minutes before topping (and patting them dry) will keep them extra crisp and mellow out the heat.

Toast your Hovis Tasty Wholemeal slices until they are golden brown.

Spread a layer of ricotta cheese over each slice. If you like a bit of extra flavour, you can whip the ricotta in a small bowl with a tiny bit of lemon zest before spreading.

Arrange the radish rounds and cherry tomato halves on top. Then top with a small sprig of fresh herbs. Finally, sprinkle with a little salt and pepper to bring out the sweetness of the tomatoes and the bite of the radish.
