Mexican-Inspired Beef & Avocado Sub Roll

Ingredients

  • 1 Hovis Buttermilk Sub Roll
  • 100g finely shredded beef
  • 3-4 tbsp refried beans
  • ½ ripe avocado
  • A pinch of salt
  • A small handful of grated cheese
  • A small handful of shredded iceberg lettuce
  • 2-3 slices of fresh tomato
  • 3-4 thin rings of red onion
  • Sliced pickled jalapeños (as many as you dare!)
  • A drizzle of hot sauce

Tip

Since this sub is loaded with smooth refried beans and mashed avocado, the fillings can shoot out the sides when bitten. Keep it structurally sound by wrapping the bottom half tightly in parchment paper or foil, deli-style, to catch any rogue drips!

Place the shredded beef into a frying pan over a medium heat with a splash of water or a knob of butter. Toss with tongs just until it’s warmed through and juicy. At the same time, scoop the refried beans into a small microwave-safe bowl and heat for 30–45 seconds until warm and easily spreadable.

Slice your sub roll down the middle, leaving a small hinge on one side so it stays together. Place it inside-down onto a hot griddle pan (or a dry frying pan) and press down gently. Toast until the inside is beautifully golden and crispy.

Open up the toasted roll. Spread the warm refried beans generously along one half. On the other half, scoop out the avocado flesh and mash it directly onto the bread with the back of a spoon. Season the avocado with a small pinch of salt.

Pile the warmed shredded beef directly onto the refried beans. Immediately scatter the grated cheese over the hot beef so it begins to melt.

Layer on the shredded lettuce, followed by the tomato slices and red onion rings. Top it off with a generous scattering of pickled jalapeños.

Drizzle your favourite hot sauce over the salad layers. Carefully fold the sub roll closed, press down slightly and slice it in half. Enjoy immediately while it's warm and wonderfully messy!
