Tip

You can use any type of cured ham if you don’t have any Serrano Ham. Also add some sun-dried tomatoes to give the open sandwich a bit of an extra kick of flavour!

Method

In a small bowl, mix the cottage cheese with the mustard until smooth. Lightly season with salt and pepper to taste. Mix the avocado slices with a squeeze of lemon (to keep it fresh), salt, and pepper and quarter the artichoke hearts.

Toast the Hovis® White ‘n Fibre slices until golden. Spread the cottage cheese mixture evenly over each slice.

Top each slice with a layer of ham, a few fresh rocket leaves, artichoke heart pieces and avocado. Finish with a crack of black pepper and a light drizzle of olive oil if desired. Serve immediately.
