Pat your veggies dry with a piece of kitchen roll before layering them on, or lightly sauté them beforehand to prevent a soggy pizza!

Method

Preheat your oven to 200°C (fan 180°C). Lightly toast the bread slices (this helps them hold the toppings without getting soggy), then place them on a baking tray lined with parchment.

Spread each slice with tomato passata or pizza sauce, right to the edges.

Scatter your prepared vegetables: chopped artichoke hearts, sliced mushrooms, bell pepper, spinach, sliced black olives, and chopped sun-dried tomatoes. Top with cheese and pepperoni, then add a pinch of salt, pepper, and a sprinkle of oregano.

Place the tray under the grill for 1–2 minutes before baking for extra crisp edges and a toasty base.

Bake for 8–10 minutes, or until the cheese is melted and bubbling and the edges are golden. Serve warm with fresh basil and a drizzle of olive oil.
