Chicken Waldorf Sandwich

A British classic made better. This Chicken Waldorf Sandwich pairs creamy chicken, crunchy apple and walnuts between soft slices of Hovis Medium Soft White.

Ingredients

  • 2 slices of Hovis Soft White Medium
  • 100g cooked chicken breast, shredded or finely diced (perfect use for Sunday roast leftovers)
  • 1/4 of a crisp red apple (like a Gala or Braeburn), diced small; 1/2 a celery stick, finely sliced; 4-5 red grapes, halved
  • A small handful of walnut pieces, lightly toasted and roughly chopped
  • A good handful of fresh watercress (stems trimmed)
  • 2 tbsp good quality mayonnaise, 1 tsp sour cream or Greek yoghurt (to lighten it up), a squeeze of fresh lemon juice, salt and plenty of cracked black pepper

Tip

Always let your chicken cool completely before mixing. If it's even slightly warm, it'll split the mayonnaise and turn your beautiful granary bread into a sad, soggy mess.

In a bowl, combine the shredded chicken, diced apple, sliced celery, halved grapes and chopped walnuts.

Add the mayonnaise, sour cream and lemon juice to the bowl. Stir everything together until thoroughly coated. Season generously with salt and black pepper. Give it a taste - it should be creamy, sweet and tangy.

Lay your slices of bread on the board. Optional but highly recommended: a very thin scrape of butter on both slices to act as a moisture barrier. Lay the fresh watercress across the bottom slice.

Spoon the chicken Waldorf mixture generously over the watercress. Top with the second slice of bread, press down gently so it all knits together and slice diagonally right down the middle.
