Preparation time: 10 mins
Cook time: 9-11 mins
Serves 12 rolls
Preheat your oven to 180°C (160°C for a fan-assisted oven) or Gas Mark 4. Lightly grease a standard 12-hole muffin tin with a little bit of butter.
In a small bowl, mix together the melted butter, 50g of caster sugar, 1 teaspoon of cinnamon and 1 teaspoon of vanilla extract until combined and smooth.
Roll the bread crusts tightly into spiral pinwheel shapes and place one snugly into the bottom of each hole in the muffin tin. Use the flat bottom of a small glass or the back of a spoon to press the bread crusts down firmly: this helps them stick together and hold their shape.
Carefully spoon or pour the melted butter mixture evenly over each of the bread rolls, ensuring they are well soaked.
In another small bowl, mix together the 1 tablespoon of caster sugar and 2 teaspoons of cinnamon. Sprinkle this topping mixture evenly over the rolls.
Pop the muffin tin into the oven and bake for 9 to 11 minutes, or until the tops are golden brown and crisp.
While the rolls are baking, whisk the icing sugar, milk and ½ teaspoon of vanilla extract together in a small bowl until you have a smooth icing.
Remove the rolls from the oven and let them cool slightly in the tin. Drizzle the icing over the warm rolls and enjoy straight away!
