Tip

For an extra layer of flavour and to slightly mellow the sharpness of the red onion, try thinly slicing it and letting it sit in a splash of red wine vinegar for about 5-10 minutes before adding it to your sandwich. This quick pickle adds a lovely tang!

Fry the bacon over medium heat until crispy. Set aside on kitchen paper to drain.

Lightly toast the bread slices and butter them while warm.

Spread mayonnaise on two slices of toast. Layer with cheddar, crispy bacon, cranberry sauce, rocket leaves and onion slices. Top each with a second slice to form sandwiches.
