Fry the bacon over medium heat until crispy. Set aside on kitchen paper to drain.
Lightly toast the bread slices and butter them while warm.
Spread mayonnaise on two slices of toast. Layer with cheddar, crispy bacon, cranberry sauce, rocket leaves and onion slices. Top each with a second slice to form sandwiches.
Serve warm or cold with a little extra cranberry sauce on the side if you like.
