Goats Cheese, Apple and Seed Toasts (Nut Free Alternative)

Ingredients

  • 4 slices Hovis White Sourdough
  • 1 tbsp extra virgin olive oil
  • 150g soft ripened goat’s cheese log (cut into ½ cm slices)
  • 1 green apple (thinly sliced)
  • 2 tsp runny honey
  • 50g sunflower or pumpkin seeds (toasted)

Tip

To get the cheese perfectly melty without burning the bread, keep a close eye on it under the grill and use a medium heat. For extra crunch, lightly toast the seeds in a dry pan before topping.

Method

Preheat the grill to medium. Lay the slices of Hovis White Sourdough on a baking tray and drizzle with oil on both sides.

Grill for 2-3 mins until lightly toasted. Turn the slices over and arrange the goat’scheese slices evenly over the top. Return to under the grill for another 3-5 mins until the cheese has started to melt and the bread is toasted.

Top each slice with the thinly sliced apple, toasted seeds and then drizzle over the runny honey. Serve with some salad leaves for a delicious light lunch.
