Fresh, fiery, and full of flavour, this prawn sub is anything but ordinary. The smashed avocado pairs perfectly with the sriracha mayo prawns and all packed into a delicious Hovis Cheese and Herb Sub Roll. It's a quick and tasty recipe for lunchtime!

Heat the olive oil in a pan over medium heat. Add the prawns and cook for 2–3 minutes on each side until pink and cooked through. Set aside to cool slightly.
In a small bowl, mix the mayonnaise and sriracha. In a separate bowl, mash the avocado, then stir in the sliced spring onion, lime juice, and a pinch of salt.
Slice the Hovis® Cheese and Herb Roll in half lengthways. Lightly toast both halves in a dry frying pan or under the grill until golden.
To assemble, layer the bottom half of the roll with baby gem lettuce, the smashed avocado mix, the slices of tomato and the cooked prawns. Drizzle over the sriracha mayo, top with the other half of the roll, and serve straight away.
